Neapolitan Herb Chicken

This chicken is absolutely delicious! It makes the perfect easy weeknight meal when you’re short on time and energy, but still want something that tastes fantastic.



🌿  ¼ cup Neapolitan Herb Balsamic Vinegar

🌿  1 Tbsp Dijon mustard

🌿  2 cloves garlic, minced

🌿  ½ tsp dried oregano

🌿  ½ tsp dried basil

🌿  Kosher salt and freshly ground pepper, to taste

🌿  4 boneless, skinless chicken thighs

🌿  3 Tbsp of olive oil for cooking

🌿  Chopped fresh parsley or green onions for garnish

In a bowl, whisk together the Neapolitan Herb balsamic vinegar, Dijon mustard, garlic, oregano, basil, and salt & pepper.


Place this mixture, along with the chicken thighs, in a large Ziploc bag. Mix it up so that the chicken is completely covered.


Marinate the chicken the fridge for at least one hour, or overnight if possible.


When ready to cook, preheat the oven to 400 degrees. Lightly oil a baking sheet with the olive oil. Place chicken on baking sheet, and roast untilt he chicken is competely cooked through.


Garnish the chicken with chopped parsley or green onion.


Serve with hot rice and steamed vegetables, if desired.
