Parmesan Truffle Fries

⚡️ Parmesan Truffle Fries ⚡️

Your whole family is going to love the decadent taste of these mouthwatering fries!

 

 

🔹  2 pounds russet potatoes

🔹  2 Tbsp olive oil

🔹  1 tsp kosher salt

🔹  2 Tbsp truffle oil

🔹  Parmesan or Pecorino cheese, freshly grated (or omit for vegan!)

🔹  High-quality sea salt for garnish

🔹  Chopped chives, for garnish

 

 

⚡️  Preheat the oven to 450 F.


⚡️   Cut the potatoes into fries (all about the same thickness), leaving the skins on.


⚡️  Place the fries in a large bowl with the olive oil and kosher salt. Mix thoroughly to fully coat the fries.


⚡️  Line two baking sheets with parchment paper, and spread the fries out. Be sure to leave as much space in between each as possible, so that none are touching. (This ensures crispy fries, instead of soggy ones!)


⚡️  Bake the fries for 15 minutes, then take them out and flip them. You can also swap the oven trays around at this time.


⚡️  Reduce the oven to 400 degrees, and bake for another 10 minutes, or until crispy and golden brown. Watch carefully near the end to be sure they don’t burn!

⚡️  Remove the baking sheets from the oven and drizzle with truffle oil. Sprinkle with parmesan cheese and chunky sea salt, breaking it up with your fingers as you go. Garnish with chopped chives.


⚡️  Serve immediately and enjoy!
