Lemon & Garlic Kale

Here’s an easy-breezy, ultra-healthy side veggie to go with almost any dish on next week’s meal plan!

 

✨🌿 Sauteed Lemon & Garlic Kale 🌿✨

◽️   1 bunch (or 2 bunches if you have a lot of mouths to feed!) of kale leaves, torn

◽️    A couple generous glugs of Garlic Olive Oil 

◽️   Half a lemon (or a whole lemon if using two bunches of kale)

◽️   A few splashes of soy sauce (or coconut aminos)

◽️   Salt and pepper

 

 

 

🌿  Heat the Garlic Olive Oil in a pan over medium-low heat.


🌿  Add the torn kale leaves, and gently toss to coat. Place the lid on the pan and leave 1 minute


🌿  Squeeze the lemon juice onto the kale, and drizzle with soy sauce. 


🌿   Cover again and let cook for a few minutes, stirring occasionally, until the kale is wilted and bright green, but still retains some bite.


This only takes five or ten minutes to whip up, and is a delicious accompaniment to your plate — for instance with grilled fish, chicken, or other meat, and roasted potatoes. Hooray for easy weeknight dinners!
