Kale, Cabbage & Cashew Salad with Sesame and Apricot dressing

This crunchy, flavourful salad is uniquely delicious and also wonderfully healthy! It makes the perfect side to grilled meat or fish, or is a filling enough to be dinner on its own!

🍑 Kale, Cabbage & Cashew Salad with Sesame and Apricot dressing 🍑


Ingredients:

‧ 2 cups chopped green cabbage

‧ 2 cups chopped red cabbage

‧ 2 cups of de-stemmed and chopped kale

‧ ½ a medium red bell pepper, sliced or chopped

‧ ½ cup chopped cilantro

‧ ⅓ cup toasted cashews, chopped


Dressing:

‧ 2 Tablespoons extra-virgin olive oil

‧ 1 Tablespoon toasted sesame oil

‧ 2 Tablespoons Apricot White Balsamic

‧ Juice of 1 medium lemon

‧ salt and pepper to taste

In a large bowl, combine all the salad ingredients. In a jar or small bowl, combine all the dressing ingredients, and whisk to combine. Pour the dressing over, and mix to combine.
