Chipotle & Chocolate Marinated Chicken Thighs

Ingredients
2 lbs boneless, skinless chicken thighs
¼ cup Chipotle Olive Oil
3 tbsp Dark Chocolate Dark Balsamic
3 cloves garlic, minced
1 tbsp honey
1 tsp ground cumin
1 tsp smoked paprika
1 tsp kosher salt
½ tsp black pepper
Optional for serving:
Fresh cilantro
Lime wedges
Crumbled cotija or feta cheese
Instructions
In a large bowl or zip-top bag, whisk together the Chipotle Olive Oil, Dark Chocolate Dark Balsamic, garlic, honey, cumin, smoked paprika, salt, and pepper.
Add the chicken thighs and toss well to coat. Marinate for at least 30 minutes, or up to 8 hours in the refrigerator.
Preheat the oven to 425°F.
Arrange the chicken thighs in a single layer on a parchment-lined baking sheet or in a lightly oiled baking dish. Pour any remaining marinade over the chicken.
Roast for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
For extra caramelization, broil for 2–3 minutes at the end of cooking, watching carefully to prevent burning.
Let rest for 5 minutes before serving, then garnish with fresh cilantro and lime wedges. Enjoy!
