Apple & Lime Slow Cooker Pulled Pork

🍎 Apple & Lime Slow-Cooker Pulled Pork 🍎

🔸 1 (5-6lb) boneless pork shoulder

🔸 ½ cup chicken or beef broth

🔸 ½ cup honey

🔸 ½ cup Red Apple Dark Balsamic Vinegar

🔸 ¼ cup Persian Lime Olive Oil

🔸 2 Tbsp dijon mustard

🔸 3 garlic cloves, minced

🔸 ½ cup diced onion

🔸 2 tsp chili powder

🔸 1 tsp fresh thyme, finely chopped, or ½ tsp dried thyme

🔸 1 Tbsp cornstarch

🍽️ Trim the excess fat off the pork shoulder, and place in the slow cooker.


🍽️ Combine the broth, honey, balsamic, olive oil, garlic, onion, chili powder, and thyme, whisk until combined. Pour over pork

🍽️ Cook for 8 hours, then remove the pork from the slow cooker and shred. Place in a bowl to the side.

🍽️ Pour cooking liquid into a saucepan over medium-high heat. Whisk the cornstarch with 2 Tbsp of water, then stir into the sauce. 

🍽️ Bring to a low boil, and continuously whisk until thickened, 3 to 5 minutes. Pour as much or as little of the sauce over the pork as you’d like, then combine. 


🍽️ Serve with warm buns and coleslaw, or in warm tortillas as tacos, garnished with cilantro if you'd like!
