Balsamic Vinegars
Balsamic Vinegar is an aromatic, sweet type of vinegar that’s prepared from the reduction of cooked white grapes. We carry both dark and white balsamic vinegars, all of which have been barrel-aged for upwards of 12 years, using traditional techniques in Modena, Italy.
Dark balsamic vinegar is created by cooking the grape pressings (called “must”) for a long time, until the reduction is dark and caramelized. The result is then aged in various barrels, according to the desired flavour profile.
White balsamic vinegar, on the other hand, is created by cooking the must with white wine vinegar on a lower temperature so that it doesn’t caramelize, which keeps its pale golden hue. After it’s barrel-aged, the result is a vinegar that has a milder and slightly less sweet flavour, with a crisp tartness to balance it.
All our flavoured balsamics are made with 100% natural ingredients, and are completely free of any fillers, preservatives, or artificial flavours.
